Joxe Mari Aizega – director general de Basque Culinary Center –; Asier Alea, -director de desarrollo global de Basque Culinary Center-, y Joao Albuquerque, -Partner de BIG y Director de Diseño en España-, han desgranado las claves de la propuesta arquitectónica del edificio y los contenidos y actividades que definen el ecosistema de GOe.
La propuesta “Olatuen Bidea – Camino de las Olas”, denominado así por la particular silueta exterior, del estudio de arquitectura danés BIG (Bjarke Ingels Group), se proclamó vencedora del concurso internacional de arquitectura convocado, el año pasado, por Basque Culinary Center. Los ejes principales sobre los que se sustenta el proyecto son, además de su singularidad arquitectónica, la apertura y diálogo del edificio con la ciudad, su integración en la ciudad desde la perspectiva de la sostenibilidad y adaptación al entorno; y la versatilidad y funcionalidad del edificio para acoger diferentes actividades.
“Con el diseño que desarrollamos para el restaurante NOMA en nuestra casa, Copenhague, tuvimos el gran placer de colaborar con Rene Redzepi, una de las mentes más brillantes de la gastronomía moderna. Con este trabajo realizado para GOe (Gastronomy Open Ecosystem) en Donostia-San Sebastián, estamos más que entusiasmados de llevar nuestra exploración arquitectónica del mundo de la gastronomía al siguiente nivel. Concebida como una extensión arquitectónica del paisaje urbano de la ciudad, nuestra propuesta libera el espacio y proporciona parques en el techo para invitar a la ciudadanía a participar con el arte y la ciencia de la gastronomía. Ubicado en la ruta por la que transcurre el Camino de Santiago, creemos que esta fusión arquitectónica de gastronomía y tecnología, ciudad y naturaleza, y edificio y parque, tiene el potencial de convertirse en destino para los peregrinos culinarios de todo el mundo” afirmaba Bjarke Ingels, fundador y director creativo del estudio Bjarke Ingels Group, al anunciar que BIG sería el estudio ganador en 2022.
Por su parte João Albuquerque, partner de BIG declaraba durante la presentación que, “partiendo de la modularidad de una cocina óptima, configuramos el nuevo GOe y sus programas públicos y privados sobre una cuadrícula. El pragmatismo de la fachada se traslada a la cubierta, extendiendo el paisaje y los numerosos espacios del edificio en un movimiento continuo. Ondeando suavemente desde el parque, GOe será un vecino amable y ciudadano de Donostia-San Sebastián, ofreciendo una ventana para el descubrimiento gastronómico global mientras que crea nuevos espacios públicos, plazas, parques y vistas”.
Diálogo con la ciudad
Lejos de diseños que dan la espalda a la ciudad el proyecto propone un paisaje sostenible, un conector entre ciudad, mar y montaña. Ubicado en el barrio de Gros en un terreno donde la orografía es aprovechada, el edificio GOe se retranquea en su parte frontal generando una nueva plaza pública que funcionará a modo de punto de encuentro y disfrute entre la ciudadanía, público de GOe y las actividades e iniciativas que se desarrollen en el espacio. GOe, que conforma un espacio privado de uso público, despliega nuevos espacios para la ciudadanía.
Uno de los espacios principales que GOe brindará a la ciudadanía será su cubierta transitable, las “olas”.
Esta cubierta ajardinada que consta de 1.405 m2, y que supone una prolongación del monte y que conectará directamente con la plaza, le permitirá mantener la cualidad de parque. Las olas del edificio se comportan como terrazas abiertas a la ciudadanía que conectan lo que sucede en el interior del edificio con el exterior.
Versatilidad y funcionalidad
La configuración de los accesos, la distribución de las diferentes áreas por plantas, la propuesta de un auditorio-grada polivalente y un espacio expositivo, como elemento vertebrador de la actividad de GOe, responden a la necesidad de unir y organizar los diferentes ámbitos, permitiendo a su vez la interacción entre las piezas que conforman “Olatuen bidea – Camino de las Olas”.
GOe está diseñado con una mentalidad innovadora, teniendo en cuenta la versatilidad de cada área y proporcionando flexibilidad absoluta y máxima modularidad en cuanto a la configuración del espacio, posibilitando transformar una habitación con el uso de mobiliario móvil, en cocina, laboratorio o incluso espacio de prototipado. Esta multifuncionalidad resulta indispensable en el ámbito de la innovación.
La configuración del espacio busca maximizar la interacción entre los distintos agentes que habitarán el edificio (empresas, estudiantes, emprendedores/as…) concentrando la distribución de flujos en un espacio único.
El edificio GOe no solo se convierte en un símbolo visualmente impresionante, sino que también se posiciona como un motor para el enriquecimiento cultural y social de la ciudad de Donostia-San Sebastián.GOe generará una concentración de talento única en el mundo a través de actividades de investigación, innovación, experimentación, emprendimiento y formación de posgrado en el amplio sector de la gastronomía.
La empresa que edificará GOe es Amenabar, ganadora de la licitación que se convocó este año. El proceso constructivo arrancó a finales de noviembre. Amenabar cuenta con 17 meses para realizar la edificación. La finalización de obra e inicio de actividad están previstos en primavera 2025.

Durante la presentación del contenido y actividad de GOe, Joxe Mari Aizega – director de Basque Culinary Center– ha repasado el reto que supuso la puesta en marcha de Basque Culinary Center y su contribución a la gastronomía. La contribución de la entidad desde el punto de vista económico y de posicionamiento es sólida. Estos resultados, unidos a la necesidad de seguir innovando, y con el objetivo de afianzar el posicionamiento de ciudad referente a nivel internacional en gastronomía, para continuar atrayendo riqueza, suponen las bases de la creación de GOe. Proyecto en el que el equipo de Basque Culinary Center, junto a otros agentes, lleva trabajando más de dos años.

Emprendedores, investigadores, empresas, estudiantes, ciudadanía serán los “habitantes” de GOe, de esa convivencia resultarán las tecnologías que den respuesta a la gastronomía del futuro.
